So a couple of weeks ago, when I reposted my Perfect Chili Recipe, so many of you asked me if I had a recipe for White Chicken Chili. I hadn't posted one, and since it was so highly requested, I thought I would put one together for you over the weekend. However, the white chicken chili I grew up on was always creamy and full of, well, fatty goodness. Since I'm not about that life these days (well, I am, but I'm trying not to be. lol ) I set out to create the perfect Healthy White Chicken Chili Recipe.
Though this is a simple recipe for Healthy White Chicken Chili, there is nothing simple about the taste. Packed full of flavor, this dish is sure to spice up these brisk autumn nights. I know you're going to DEVOUR this one so...
Let's Get Started!
Healthy White Chicken Chili Recipe:
*Prep Time: 5 min *Cook Time: 30 min *Difficulty: Easy *Servings: 4-6
Ingredients:
- 2-3 Tbsp Extra Virgin Olive Oil
- 1 lb Boneless, Skinless Chicken Breast
- 1 4 oz can of Green Chilies
- 1 onion, diced
- 6 Cloves of Garlic, minced
- 1 Tbsp Cumin
- 1 1/2 tsp Ground Coriander
- 1 tsp Dried Oregano
- 1 tsp Salt
- 2 15 oz cans of and White Bean, drained and rinsed
- 4 cups Chicken Broth
- 2 limes, Juiced
- 2 Dried Bay Leaves
To begin you'll need to place a heavy bottomed soup pot over medium/high heat.
This is my new enamel coated, oval, cast iron dutch oven from Aldi that my husband recently bought me. It was only 29.99. I usually pick one up when they have them during the holiday season because its such a good value.
To the pot you will need to add 2-3 Tbsp of extra virgin olive oil and allow the pot to get hot.
Once your soup pot is hot, add the onions and let them cook until they are soft and translucent.
This usually takes 2-3 minutes.
When your onions are tender, add the garlic.
Allow it to cook just long enough so that you can smell it coming from the pot.
Now add the can of green chilies.
I added it juices and all. I didn't find that it really make it all that spicy, it was more like a warm heat.
Next add the beans along with the
salt,
cumin,
ground coriander,
and oregano.
Give everything a stir so that all of the vegetables are coated with spices.
At this point you can place the chicken on top of the beans, chilies, and spices.
Season it with a little salt and pepper,
Then pour the chicken broth over it and
add the bay leaves.
After that, you can squeeze in the lime juice.
Give everything a nice stir,
Cover with a vented lid,
And let simmer for 30 minutes.
After 30 minutes you will need to remove the chicken from the pot.
Shred or dice the chicken.
And then return it to the pot.
And that's it! Amazing, mouthwatering, Healthy White Chicken Chili Recipe.
I know this may not be the creamy goodness that you are used to, but trust me when I say that the flavor is ALL there. The fresh lime juice adds a little something that will have you saying "that is so good, what is it?" I love little things in recipes that do that. The best part, this is totally healthy! Perfect for Paleo, low card, clean eating, gluten free, and my favorite, The Daniel Plan! I like to top mine with a little shredded cheddar, cilantro, lime, and some greek yogurt, but you could totally add avocado and tortilla chips. My husbands personal favorite item to have with his chili is my delicious Cheddar Biscuits.
When making changes in the way you eat, you should NEVER sacrifice flavor for less calories. You CAN have both, and this Healthy White Chicken Chili Recipe is a perfect example. So get in the kitchen and make it TONIGHT!
** ATTENTION UPDATE**
I recently made this in my crockpot and it was amazing. Simply place all of the ingredients into your slow cooker and cook on LOW for 6-8 hours or HIGH for 4-6. This recipe just got even better!
