TRADITIONAL IRISH STEW:
I have a confession to make. This recipe isn't exactly a "traditional" Irish stew. If it were, I would be using lamb or Mutton. None of those things are necessarily available around here, so beef it is. Another thing that the Irish would do is thicken their stew with mashed potatoes, and I don't do that either. I guess I'm just making a beef stew with Irish beer, but it's going to be the best dang beef stew you've ever tasted!

INGREDIENTS:
- 2 lbs of Beef Stew Meat, cubed
- 3 Tbsps All-Purpose Flour
- 2 Tbsps Olive Oil
- 1 Onion, diced
- 1 Tbsp Garlic, sliced
- 3 Parsnips, diced
- 3 Carrots, sliced
- 6 Red Potatoes, quartered
- 2 Celery Stalks, sliced
- 1 (14 oz) cam Diced tomatoes
- Guinness Beer, 1 pint
- 4 c. Beef Stock
- 2 Tbsp Tomato Paste
- 1/4 cup Worcestershire Sauce
- 1 Tbsp. Kosher Salt
- 1 tsp. Ground Black Pepper
- 1 tsp. Dried Thyme
- 2 cups Frozen Peas
INSTRUCTIONS:
- Sear the Beef: In a large bowl, toss the beef cubes with the flour until evenly coated. Heat olive oil in a skillet over medium-high heat. Sear the beef on all sides until browned (about 3-4 minutes per side). Transfer to the crockpot.
- Sauté the Aromatics: In the same skillet, add the chopped onions and garlic. Sauté for 2-3 minutes until fragrant. Transfer the onions and garlic to the crockpot.
- Assemble the Stew: Add the carrots, potatoes, celery, diced tomatoes, beef broth, Guinness beer, tomato paste, Worcestershire sauce, thyme, rosemary, black pepper, and bay leaves to the crockpot. Stir everything together to combine.
- Slow Cook to Perfection: Cover and cook on low for 8 hours or high for 4-5 hours, until the beef is fork-tender and the vegetables are soft. In the last 30 minutes, stir in the frozen peas. Remove bay leaves before serving.
- Serve Enjoy: Ladle the stew into bowls and garnish with fresh parsley. Serve with warm crusty bread or over mashed potatoes for a healthier meal.
