Even though the weather is getting warmer, we've been getting A LOT of rain. I'm not going to lie, rain does not bring out the productivity in me. So on those long and rainy spring days, I like to throw something warm and hearty into the slow cooker and let it do all the work while take a nap! Today's recipe is the perfect example of that. Nothing says rainy day love like my Slow Cooker Beef Tips w/ Mushroom Gravy. With just a little prep the night before, you are going to have the most luscious meal of your life! I can't wait to share it with you, so
Let's Get Started!
*Prep Time: 20 min. *Cook Time: 8-10 hours *Difficulty: Easy *Servings: 4-6
Ingredients:
- 1 3lb. Chuck Roast, cubed
- 1 Container of Cremini Mushrooms
- 1 Onion, Sliced
- 4-6 Cloves of Garlic, minced
- 3 c. Beef Broth
- 3 tbsp. Corn Starch
- 1/4 c. Water
- 1 tsp. Thyme
- 1 tbsp. All Purpose Seasoning (Found Here)
- 1 tbsp. Worcestershire Sauce
- 1 tbsp. Red Wine Vinegar
- Salt & Pepper
To begin, cut the roast into bite-sized cubes.
Of course you can buy this already done, but I try to save pennies where I can.
Next season the beef, liberally, with salt and
Pepper.
Give it a little toss to make sure everything is coated with seasoning.
Now you will need to place a skillet over high heat and add some oil.
Add the beef to the hot skillet and let the meat brown.
Once browned, place the meat into your slow cooker.
Now pour your beef broth into the hot skillet.
Use a spatula or wooden spoon to scrape up all the brown bits off of the bottom of the pan.
Now add the Worcestershire sauce,
Red wine vinegar,
All purpose seasoning,
Thyme,
Tsp. salt,
And a half tsp. of pepper.
Stir together and taste for seasoning.
Now pour the seasoned beef broth into the slow cooker.
I know what you are thinking. "Why on earth do I need to do all of that? Can't I just throw it all in and forget it?" Well, yes, you can. BUT, when you take a few extra minutes to do few extra steps, you get a WHOLE LOT MORE flavor! So my question to you is, why wouldn't you?
Now you can slice the mushrooms and onions, and mince the garlic
And add them to the slow cooker.
Now to make the "slurry".
To a measuring cup, add the corn starch.
And the 1/4 c. of water.
Mix it together.
Pour into the slow cooker.
This is what is going to make your gravy think and rich.
Place the lid on the slow cooker, set it to LOW, and let it go for 8-10 hours.
When you are ready, simply make a pot of egg noodles to serve with it.

Slow Cooker Beef Tips w/ Mushroom Gravy:

All Purpose Seasoning:
- 4 tbsp. Seasoning Salt
- 1 tbsp. Garlic Powder
- 1 tbsp. Onion Powder
- 1 tsp. Kosher Salt
- 1 tsp. Black Pepper
- Mix together in an airtight container.
Directions:
- Cube the roast and season with salt and pepper.
- Place a skillet over high heat and add oil. Once hot, add the beef and brown on all sides.
- Place the browned beef into the slow cooker.
- To the hot skillet add the beef broth, and with a spatula, scrap up all of the brown bits off of the bottom.
- To the skillet and broth add the all purpose seasoning, thyme, Worcestershire sauce, red wine vinegar, salt, and pepper.
- Pour the seasoned broth into the slow cooker.
- Add the mushrooms, onions, and garlic to the slow cooker.
- Combine corn starch and water. Mix together and pour into the slow cooker.
- Cover and set to LOW for 8-10 hours.
- Serve over egg noodles and ENJOY!
