INGREDIENTS:

For this Chicken and Berry Salad with Balsamic Poppy Seed Dressing you will need to gather a few, simple ingredients. 


For the Salad:
  • 2 Grilled Chicken Breasts
  • 1/2 Bag of Baby Spinach
  • 10 Strawberries, sliced
  • 1 Pint of Blueberries
  • 1/2 Red Onion, thinly sliced
  • Feta Cheese, crumbled

For the Dressing:
  • 1/4 cup Balsamic Vinegar
  • 1/4 cup Olive Oil
  • 2 Tbsp Honey (or sugar)
  • 1 Tbsp Dijon Mustard
  • 1 tsp. Onion Powder
  • 1 tsp. Poppy Seeds
  • 1 tsp. Paprika
  • 1 tsp. Salt






INSTRUCTIONS:

Grill the Chicken:  
  1. Season the chicken on both sides with salt, pepper, garlic powder, onion powder, and paprika.  
  2. Grill 4-6 minutes on each side until done and no longer pink.  You will want an internal temperature of 165°F/74°C.  Let rest for a few minutes before slicing.

Making the Salad:
  1. In a large bowl, combine the mixed greens, berries, feta cheese, and red onion.  
  2. Toss Gently and mix all ingredients evenly. 

Prepare the Dressing:
  1. In a small bowl, whisk together the balsamic vinegar, olive oil, honey, dijon mustard, salt, pepper, onion powder, and paprika.
  2. Adjust seasoning to taste.

Assembling the Salad:
  1. Drizzle the dressing over the salad just before serving.
  2. Toss the salad Gently to coat all ingredients with dressing.
  3. Top with grilled chicken.
  4. Serve immediately and enjoy the burst of flavors and textures.
