INGREDIENTS:
To make this delicious Bow Tie Pasta Salad, you'll need the following ingredients:
- 1 lb. of Bow Tie Pasta
- 12 oz. Fresh Broccoli, cut into florets
- 2 Carrots, peeled and sliced
- 1 cup. Cherry Tomatoes, halved
- 3 Scallions, chopped
- Pepperoni (optional)
- Cooked Bacon (optional)
- 2 cups Monterrey Jack Cheese, shredded
For the Dressing:
- 3 tablespoons Olive Oil
- 2 tablespoons Red Wine Vinegar
- 1/3 cup Mayonnaise or Greek Yogurt
- 1 teaspoon White Sugar
- 2 Cloves of Garlic, minced
- Salt and Pepper
INSTRUCTIONS:
1. Prepare the Vegetables: While the water is coming to a boil for the pasta, chop the tomatoes, carrots, broccoli, green onions, mince the garlic, and shred the cheese.
2. Make the Dressing: In a small bowl combine the mayonnaise, olive oil, red wine vinegar, sugar, garlic, salt and pepper. Whisk together until well combined.
3. Cook the Pasta: Bring a large pot of salted water to a boil. Add the bow tie pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
4. Blanch the Broccoli and Carrots: While the pasta is cooking I like to add my carrots and broccoli about 2-3 minutes before it is finished. This makes the broccoli and carrots slightly tender and easier to chew in the salad.
5. Combine Ingredients: Add the cooked pasta and blanched veggies to a bowl with the tomatoes and meats if you choose to use them. Pour the dressing over the top and toss everything together until evenly coated.
6. Add the Finishing Touches: Sprinkle the cheese and green onions over the salad and give it a final toss.
